alvados, an aged spirit which captures the soul of the fresh apple, is produced only in the Normandy region of France. Because of the near-perfect climate and soil, the Pays d'Auge in the center produces the finest apple spirits. And that's where the Drouin family has been producing Calvados for generations. Their Marquis de Saint-Loup Calvados has garnered more than 390 medals and Certificates of Merit in competition.
The family orchard covers nearly 55 acres; its a mix of sweet, bitter, bittersweet, bittersharp, and sharp traditional Norman apple varieties, including Bisquet, Bedan, Petit-Joly, and St. Martin. In any given year, at least fifteen different apple varieties are used to produce their Marquis de Saint-Loup. The fruit is harvested only when it is perfectly tree-ripened.
They press their apples just once to produce a cider which they ferment and mature in oak barrels for several months. Early the following spring, the cider is distilled twice in a Cognac pot still. It slowly matures in small Port or Sherry casks, to develop a luxurious color and taste.
Enjoy this product of the Drouin's orchard with cocktails, with cheese, or as an unparalleled after dinner drink. (It's also an excellent addition to any recipe for roast ham, pork, poultry, or game.)
